Ingredients
- 8 egg whites
- 4 egg yolks
- 1 cup of fresh diced tomatoes
- 1/2 cup of fresh diced red onion
- 2/3 cup nonfat cottage cheese
- 1/2 Tablespoon butter
- 2 tsp. Spike Original
- 1 tsp. Spike Vege- Sal
Directions
BEAT eggs (whites and yolks) and season with Spike Original and Spike Vege-Sal. Gently fold in cheese until blended. Melt butter in a large skillet. Add the chopped onions to the pan and sauté over medium heat until they are translucent. Add the tomatoes and cook over medium heat until soft, 8 to 10 minutes. Add eggs and cook over low heat until they begin to set.
Serve immediately.
