Scrambled Eggs

Double the protein, 1/2 the fat! (Serves 4)


  • 8 egg whites
  • 4 egg yolks
  • 1 cup of fresh diced tomatoes
  • 1/2 cup of fresh diced red onion
  •  2/3 cup nonfat cottage cheese
  •  1/2 Tablespoon butter
  •  2 tsp. Spike Original
  •  1 tsp. Spike Vege- Sal


BEAT eggs (whites and yolks) and season with Spike Original and Spike Vege-Sal. Gently fold in cheese until blended. Melt butter in a large skillet. Add the chopped onions to the pan and sauté over medium heat until they are translucent. Add the tomatoes and cook over medium heat until soft, 8 to 10 minutes. Add eggs and cook over low heat until they begin to set.

Serve immediately.
